in a rural and convivial environment, all seasoned with our extra virgin olive oil, the “liquid gold of Apulia”.

Culinary treasures based on local traditions can be found between the whitewashed walls of the homelike kitchen. In particular, La Frasca, in the heart of Borgo Egnazia, preserves the recipes that have been handed down from generation to generation and that only use the freshest products of our land.
The name, La Frasca, is inspired by the ancient custom of hanging a twig over the door signalling a place where a traveler could find a welcoming tavern, indicating the presence of good wine and good food.
Here, the walls are decorated with artifacts and tools reflecting rural life, inspired by the countryside and the harvest. The white vaulted rooms resound with the laughter of friends and with the voices of families chatting among the numerous bottles of locally produced wine, enjoying their time among the dishes, flavors and fantasies of Puglia.

Territory

Every single drop of extra-virgin olive oil comes from this territory and over 60% of our vegetables are personally grown in our own fields.
Apulia is not just our region of birth, it is our reason of existence. There is not one single ingredient that does not have Apulian origins or a product that does not enhance the excellence of our local heritage.
Our Values
Small local farmers are a source of profound pride for us, which is why we promote their fresh produce that has been organically grown using traditional methods. In this way, our guests will always be able to enjoy seasonal fruits and vegetables which respect the natuaral course of time and nature.
For this reason, La Frasca offers specially designed seasonal menus inspired by the Mediterranean diet. Our dishes respect Apulian biodiversity with the aim of preserving unique regional varieties and protecting antique agricultural traditions.
