Today, it speaks of a convivial way of cooking that preserves the treasures of Puglian tradition and sets them back on the table: Sunday dishes, home recipes, simple flavours that stand the test of time.

: The trattoria at the heart of Borgo Egnazia, a place that preserves the flavours, gestures and traditions rooted in the memory of this land. A cuisine shaped by the seasons and simple ingredients that, over time, have travelled across Puglia, leaving their mark on its dishes and on the culture of the table. Here, vegetables harvested according to the rhythms of nature arrive alongside legumes, chargrilled aubergines, meatballs in tomato sauce, handmade orecchiette and recipes that bring back family lunches and long Puglian Sundays. Wine is poured slowly, laughter echoes against the white walls, and everything holds on to the authentic simplicity of country life.

: 80% of the vegetables served on this menu come from the gardens of Borgo Egnazia or from producers within our supply chain. A cuisine that tells the story of Puglia through carefully selected ingredients and an ongoing commitment to preserving and enhancing the region’s agricultural heritage. Within the Borgo’s gardens, ancient varieties are recovered and cultivated according to regenerative organic farming practices, through a process of research, selection and cultivation that follows the rhythm of the seasons. From seed to field, and from the field to the kitchens of the Borgo: some varieties become part of the seasonal menus, while others return to the Casa delle Sementi, the living archive of agrobiodiversity created to preserve, multiply and share seeds and agricultural knowledge. Bringing them to the table means experiencing each ingredient in its most authentic expression, while contributing to the regeneration of Puglian biodiversity.
